Ingredients

1 lb ground lamb
1 1/2 tablespoons ground cumin , I used less
1 1/2 tablespoons paprika
kosher salt and freshly groulnd black pepper , to taste
4 tablespoons unsalted butter
2 tablespoons olive oil
4 garlic cloves , minced
1 large yellow onion , minced
1 teaspoon crushed red chile flakes
1/2 teaspoon ground ginger
1/2 teaspoon saffron , crushed
1 bay leaf
28 ounces whole peeled tomatoes with juice , drained , crushed by hand ( I used 2 14 ounce cans of fire roasted diced tomatoes )
4 eggs
1/2 cup kalamata olive , unpitted
1/4 cup parsley , finely chopped

Instructions

1.In a large bowl, mix ground lamb, ground cumin, paprika, salt, and pepper until combined.
2.Shape the mixture into 12 meatballs and set them aside.
3.In a large skillet, melt the butter over medium heat.
4.Add the olive oil, garlic, onion, chile flakes, ginger, saffron, and bay leaf.
5.Cook until the vegetables are soft and fragrant but not browned.
6.Add the tomatoes and cook for 10 minutes.
7.Place the meatballs into the skillet and spoon the sauce over them.
8.Simmer the mixture on low heat for 10-12 minutes.
9.Crack the eggs into the skillet, and sprinkle the olives and parsley on top.
10.Cover the skillet and cook until the eggs are set but the yolks are still soft, about 8-10 minutes.
11.Remove the bay leaf and serve hot with crusty bread or over rice.
