2 fresh curry leaves

Instructions

1.In a large pan, mix sugar and water until the sugar dissolves.
2.Add ginger, garlic, star anise and curry leaves, then stir in the dark soy sauce.
3.Bring the mixture to a boil and then lower the heat to a simmer for about 45-50 minutes.
4.Once the sauce thickens, remove it from the heat and let it cool. Then strain the sauce to remove the solid pieces.
