Ingredients

3 beef bones with marrow
2 tablespoons olive oil , divided
1 jar sauerkraut , rinsed and drained
1 onion , chopped
2 large baking potatoes , peeled and cubed
1 tablespoon hot chili sauce
salt
1/4 cup sour cream ( optional )

Instructions

1.Roast the beef bones in the oven at 400 degrees Fahrenheit for 30 minutes.
2.Heat 1 tablespoon of olive oil in a large pot over medium-high heat. Add the sauerkraut and onion, sauté for 5 minutes.
3.Pour 8 cups of water and roasted beef bones in the pot, bring to a boil and reduce heat to low. Cover and simmer for 1 hour 30 minutes.
4.Remove the bones from the soup and shred the meat. Discard the bones and return the meat to the soup.
5.Add potatoes and hot chili sauce, cover and simmer on low heat for 30 minutes.
6.Season with salt and stir in sour cream (optional). Serve hot.
