Kathy's Italian cookies are a popular dessert in Italy that are often served during the Christmas holidays. They are mainly made with a rich, buttery dough, fresh orange juice, and vanilla extract. The dough gets rolled into small balls, baked to perfection, and then dipped in sweet icing made from confectioners' sugar. These cookies are suitable for any occasion, be it a family reunion, a birthday party, or just a pleasant afternoon gathering with friends. They're incredibly light, soft, chewy, and flavorful, making them an excellent accompaniment to tea or coffee. You can also store them in an airtight container for up to a week, which makes them perfect for a quick snack or a gift for someone special.

Instructions

1.Preheat oven to 350°F.
2.In a mixing bowl, beat the butter and sugar together using a hand mixer, until light and fluffy.
3.One at a time, beat in the eggs, then add the vanilla extract and fresh orange juice.
4.In a separate mixing bowl, combine flour and baking powder. Gradually add this to the butter mixture, beating until well-combined.
5.Using a small ice cream scoop or tablespoon, form the dough into 1-inch balls and place it on an ungreased cookie sheet.
6.Bake the cookies for 10-12 minutes or until they start to brown.
7.Once they're baked, allow them to cool for a while. Meanwhile, mix the confectioners' sugar with enough water or milk until it’s just pourable. Dip the cookies in the icing and let them dry out completely on a wire rack.
