Ingredients

2 cans sauerkraut , not drained ( without vinegar , I use Silver Floss Barrel Cured Shredded Sauerkraut )
1 large green bell pepper , finely chopped
1 large red onions or 1 large sweet vidalia onion , finely chopped
4 stalks celery , finely chopped
1/2 cup apple cider vinegar
6 tablespoons brown sugar , firmly packed
water , to cover

Instructions

1.Rinse the sauerkraut lightly and drain.
2.Combine sauerkraut, green bell pepper, onion and celery in a large pot.
3.Add apple cider vinegar, brown sugar, water, and bring to a boil.
4.Turn the heat down, cover and simmer for about 30 minutes.
5.Divide mixture into sterilized jars and seal.
6.Keep in the refrigerator for 2 days before consuming and use within 2-3 weeks after making.
