grated white pumpkin , 1 cup
sugar , 3/4 cup
ghee , 1 1/2 tbsp
cardamom powder , 1/2 tsp
saffron , a pinch
cashews , 1 tbsp

Instructions

1.In a pan, add grated pumpkin and give a quick stir. cook covered for 10 minutes in low flame, stirring occasionally.
2.After 10 minutes, add sugar and mix well. cook until the sugar dissolves and the mixture thickens.
3.In another small pan, heat up the ghee, add cashews and roast until golden brown.
4.Add the ghee/cashews mixture to the pumpkin mixture and mix everything well.
5.Finally, add cardamom powder, saffron strands and mix well. The Halwa is ready to be served.
