Ingredients

1/2 kg mincemeat
2 teaspoons salt
1 teaspoon kashmiri chili powder
1/2 teaspoon dry ginger powder
1 teaspoon coriander powder
3 tablespoons plain yogurt
1 teaspoon cumin seed
1 teaspoon garam masala
2 tablespoons mustard oil
1 inch ginger , ground
2 tablespoons fresh coriander leaves , finely chopped
100 g khoya ( dried milk )
4 tablespoons gram flour
2 1/2 cups plain yogurt
4 tablespoons melted ghee or 4 tablespoons melted oil
4 cloves
4 large cardamoms
1 teaspoon salt
1 pinch asafoetida powder
2 tablespoons milk
4 pieces saffron , pounded and soaked in the milk
1 teaspoon kewda essence
Kashmiri koftas are a popular dish in the northern region of India, particularly in the state of Jammu and Kashmir. This dish has a unique blend of flavors, combining meaty, spicy, and creamy tastes. Instructions

1.Take a large mixing bowl and add minced meat, salt, kashmiri chili powder, dry ginger powder, coriander powder, plain yogurt, cumin seeds, garam masala, mustard oil, ginger, fresh coriander leaves, dried milk, and gram flour. Mix all ingredients well and then make small balls (koftas) from the mixture.
2.In a separate bowl, whisk the 2 1/2 cups of plain yogurt and set aside.
3.Take a large pot and heat melted ghee or oil over medium heat. Add cloves, cardamom, salt, and asafoetida powder to the pot and cook for 1-2 minutes, until fragrant.
4.Add the prepared koftas to the pot and fry for 5-7 minutes, until lightly browned on all sides.
5.Pour the whisked yogurt over the koftas and stir gently.
6.After 1-2 minutes, add soaked saffron milk and kewda essence to the pot. Simmer the koftas for 5-7 minutes until the gravy thickens and the koftas are fully cooked.
