Ingredients

5 lbs potatoes ( baking potatoes are NOT recommended , as they are too flaky )
1/2 cup diced smoked bacon
1/2 cup vegetable oil
3 tablespoons white vinegar ( mild vinegar such as white wine vinegar or herb vinegar )
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon pepper
3/4 cup sliced green onion
1/4 cup chopped chives
Kartoffel Salat, also known as the German Potato Salad, is a popular potato dish served throughout Germany and other parts of Europe. Instructions

1.Cut potatoes into small bite-sized pieces and place them in a large pot with enough water to cover them. Boil the potatoes until fork-tender, about 20 minutes.

3.In a frying pan, cook the diced bacon until browned. Remove bacon and set it aside.
4.In a small bowl, whisk together the vegetable oil, vinegar, sugar, salt, and pepper.
5.Add the bacon and sliced green onions to the potatoes.
6.Pour the dressing over the potatoes and toss everything together until the potatoes are completely coated.
7.Sprinkle chopped chives on top before serving.
