Ingredients

1/2 cup butter , melted
2 cups water
1 cup uncooked rice
2 cups milk
salt
1/2 cup water
1 teaspoon salt
1 cup rye flour
1/4 cup all-purpose flour
1/2 cup butter , at room temperature
2 hard-boiled eggs , chopped
1 pinch fresh ground white pepper ( optional )
1 pinch ground ginger ( optional )
Karjalan Piirakka, or Karelian Pie, is a traditional Finnish dish that originated in the region of Karelia, which is now divided between Finland and Russia. This pastry is typically enjoyed as both a snack and breakfast dish, and it has become a staple food all over the country. The flaky and crumbly rye crust is filled with a mixture of cooked rice and milk, making it a slightly sweet and savory pastry.

Instructions

1.In a pot, bring water to a boil and add rice; simmer for about 15 minutes.
2.Add milk and salt and let it cook till mixture thickens; then let it cool.
3.In a separate pot, bring water, 1/2 cup of melted butter, and salt to a boil.
4.In a mixing bowl, combine rye flour and all-purpose flour; add the hot water mixture and mix.
5.Knead the dough in a bowl or onto a floured surface until smooth.
6.Roll the dough and cut it into circles.
7.Place a spoonful of the rice mixture in the center of each circle and fold it over the filling to create a half-moon shape.
8.Pinch the edges to seal in the filling.
9.Bake the pies for 15-20 minutes until golden-brown.
10.For the egg-butter spread, combine softened butter, finely chopped hardboiled eggs, white pepper, and ginger (optional) in a mixing bowl and whisk well until the mixture is creamy.
11.Spread egg butter onto the warm pies and serve.
