Ingredients

2 cups water
1 cup uncooked white rice
2 cups milk
salt to taste
1/2 cup water
1 teaspoon salt
1 cup rye flour
1/4 cup all-purpose flour , or as needed
3 tablespoons butter , melted
Karjalan Pies, also known as Karelian pies, are a traditional Finnish pastry originating from the region of Karelia. It is usually served as a breakfast dish or as a snack throughout the day. Instructions

1.In a medium saucepan, bring 2 cups of water and rice to a boil.

4.In another pot, mix 1/2 cup of water and salt together until the salt dissolves.
5.Add rye flour and mix until it forms a dough.

8.Fold the edges of the dough over to enclose the filling, leaving an open hole in the middle.
9.Place the pies on a baking sheet lined with parchment paper and brush the melted butter on top.
10.Bake the pies at 350°F (175°C) for 30-40 minutes or until golden brown.
