Ingredients

6 eggs
1 cup white sugar
1 cup brown sugar
1 cup peanut oil
1 1/3 cups buttermilk , with the yellow flakes
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
1/2 cup spiced rum
2 cups finely chopped walnuts
2 1/2 cups white sugar
1 1/4 cups water
1 1/2 teaspoons cinnamon
2 medium sized lemon slices , diced and smashes , saving all of the juices
2 medium sized orange slices , diced and smashed , saving all of the juices
1/2 cup spiced rum
1/2 cup finely chopped walnuts

Instructions

1.Preheat oven to 350°F (175°C).
2.In a large mixing bowl, whisk together the eggs, white sugar, brown sugar, and peanut oil until smooth.
3.Add the buttermilk and mix until combined.
4.In a separate bowl, sift together the flour, baking soda, baking powder, salt, and cinnamon.
5.Gradually add the dry ingredients to the wet ingredients and mix until just combined.
6.Stir in the spiced rum and finely chopped walnuts.
7.Pour the batter into a greased 9x13 inch baking dish and bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
8.While the cake is baking, prepare the syrup. In a medium saucepan, combine the white sugar, water, cinnamon, lemon slices, orange slices, and spiced rum.
9.Bring the mixture to a boil and then reduce the heat and simmer for 10-15 minutes or until the mixture has thickened slightly.
10.Remove the lemon and orange slices and stir in the chopped walnuts.
11.When the cake is done baking, remove it from the oven and immediately pour the syrup over the top of the cake.
12.Allow the cake to cool to room temperature before serving.
