1 whole chickens , thawed and rinsed
1 can black beans , drained
1 can sliced black olives , drained
2 cans green chilies , drained ( chopped or sliced )
2 cans green enchilada sauce
2 cups grated monterey jack cheese
15 flour tortillas

Instructions

1.Preheat the oven to 375°F. Grease a 9 x 13-inch baking dish.
2.Cook the chicken in a large pot of water until it is fully cooked. Remove the chicken from the water and let it cool slightly before shredding it into small pieces.
3.Mix the black beans, black olives, and one can of the green chilies in a bowl.
4.Spread a thin layer of enchilada sauce on the bottom of the prepared baking dish.
5.Place one tortilla on a flat surface and fill it with the chicken and the black bean mixture.
6.Roll the tortilla tightly and then place it seam-side down in the baking dish.
7.Repeat the process until all the tortillas are filled and rolled.
