Ingredients

1 cup wheat flour
3 tablespoons ghee
1 pinch salt
1/2 liter oil ( for frying )
1 cup grated coconut
3 1/4 cups sugar
1 1/2 cups milk
6 ounces almonds
6 ounces raisins
1/2 teaspoon cardamom powder
1 tablespoon poppy seed
Karanji (Gujiya) is a traditional North Indian dessert popular during festivals like Holi and Diwali. These crescent-shaped pastries are filled with a mixture of grated coconut, sugar, and dry fruits like almonds and raisins, flavored with cardamom powder and poppy seeds. The outer layer is made of wheat flour and ghee, which are fried until crispy. This dessert is easy to make and can be enjoyed as a sweet treat with family and friends.

Instructions

1.In a mixing bowl, add wheat flour and ghee. Mix well and add warm water to make a stiff dough. Cover it with a damp cloth and let it rest for 30 minutes.
2.In a heated pan, add grated coconut, sugar, milk, almonds, raisins, cardamom powder and poppy seeds. Cook them together for about 10 minutes until the mixture thickens. Let it cool.
3.Divide the dough into equal portions and roll them into circles. Place a spoonful of filling in each of them and fold the circle over into a semi-circle. Pinch the edges to seal them.
4.In a pan, heat the oil for frying and add the karanji (gujiya) one at a time. Fry them until they turn golden brown. Take them out on a paper towel to remove excess oil.
5.Let them cool before serving.
