Ingredients

500 g caster sugar
115 g arrowroot
3 -5 drops yellow food coloring
2 teaspoons lime juice
ghee , as required
60 g almonds
30 pistachios

Instructions

1.In a bowl, mix the arrowroot with enough water to make a paste.
2.In a wok, heat ghee until hot and add the almond and pistachios to fry them for 10 to 15 seconds. Remove and place them on a paper towel.
3.In the same wok, add caster sugar with equal amount of water. Stir continuously until the sugar dissolves.
4.Add the arrowroot paste to the sugar syrup and stir well.
5.Add food coloring and lime juice.
6.Keep stirring on medium heat for 10 to 15 minutes or until a thick, translucent mass is formed and the mixture begins to leave the sides of the wok.
7.Pour the mixture onto a greased plate and garnish with fried almonds and pistachios.
8.Let it cool for an hour or two, then cut into pieces and serve.
