Ingredients

600 g boneless skinless chicken thighs
2 tablespoons soy sauce
2 tablespoons sake
2 teaspoons fresh ginger juice ( I grate fresh ginger root , then squeeze between my finger tips to extract the juice )
5 tablespoons cornstarch
vegetable oil ( for deep frying )

Instructions

1.Cut the chicken thighs into bite-size pieces and put them in a mixing bowl.
2.In a separate mixing bowl, mix soy sauce, sake, and fresh ginger juice, and pour the mixture over the chicken.
3.Mix cornstarch and chicken until the chicken is evenly coated.
4.Heat vegetable oil in a deep-frying pot to 170°C, then add chicken pieces to the oil, taking care not to overcrowd the pot.
5.Fry the chicken for 7-8 minutes, or until the batter is golden brown and crisp.
6.Using a slotted spoon, take the chicken out of the pot and let it drain excess oil on a paper towel.
7.Serve the Karaage chicken with a wedge of lemon and your favorite dipping sauce.
