Ingredients

4 cups cooked sushi rice ( I recommend Maki Sushi Rice ( Rice Cooker ) )
6 -8 sheets nori
1 cucumber ( sliced lengthwise )

Instructions

1.Cut the cucumber into long, thin strips.
2.Place a sheet of nori on a bamboo sushi mat, shiny side down.
3.Wet your hands and scoop a handful of sushi rice onto the nori.
4.Spread the rice evenly over the nori, leaving a small border at the top.
5.Place the cucumber strips on top of the rice.
6.Roll the sushi away from you, using the mat to shape it.
7.Press the mat firmly to ensure the sushi is tightly rolled.
8.Cut the sushi roll into slices using a sharp, wet knife.
