300 g frozen puff pastry
500 g fish fillets , cooked and skinned
100 g pickled gherkins , finely chopped
1 medium onion , finely chopped

2 tablespoons flour
1 cup cream

1 cup milk ( optional )

Instructions

1.Preheat oven to 220°C (200°C fan-forced).

4.Spread the fish mixture over one half of the pastry square and fold the other half over to form a rectangular shape.
5.Brush the edges with beaten egg and use a fork to press down and seal the edges.
6.Place the fish pastry onto a lightly greased baking tray and brush the top with the beaten egg.
7.Bake for 20-25 minutes, or until pastry is golden and crisp.
8.Meanwhile, melt the butter in a saucepan over medium heat and add the flour. Stir well to combine and cook for 1-2 minutes.
9.Gradually add the cream and milk (if using) to the saucepan, whisking constantly until well combined and smooth.
10.Stir in the cheddar cheese, cayenne pepper, salt and pepper, and cook until the cheese has melted and the sauce is thick and creamy.
11.Serve the Kangaroo Pie hot with the cheese sauce and garnish with fresh parsley sprigs.
