1 onion , chopped
2 beets , grated
3 carrots , grated
1 potato , cubed
2 tablespoons oil
4 cups water
1 head cabbage , chopped
1/2 green pepper , chopped
3 stalks celery , chopped
1/4 teaspoon salt
1/2 teaspoon pepper
1 cup tomato juice
1/2 cup sour cream , for garnish
dill , for garnish
Borshch is a traditional Ukrainian soup that is enjoyed throughout Eastern Europe. Instructions

1.Saute onion, beets, carrots, and potato in oil for 10 minutes.

4.Add tomato juice and simmer for 10 more minutes.
5.Serve hot with a dollop of sour cream and sprinkle of dill.
