Ingredients

1 onion , diced
2 tablespoons olive oil
2 yellow summer squash , diced in 3/4-inch cubes
1 tablespoon chopped garlic
8 cups chicken broth
2 teaspoons dried sage
2 teaspoons italian seasoning
2 teaspoons smoked paprika
1 can kidney beans , drained
1 can diced tomatoes , including the juice
1 bunch kale , cut into small pieces , ribs and stems removed
1 cup elbow macaroni ( Barilla Plus brand is ideal )
1/2 teaspoon red pepper flakes
freshly ground pepper
4 links fully-cooked chicken sausage ( I used roasted garlic flavor )
parmesan cheese , to sprinkle on each serving
This hearty and flavorful soup is perfect for a warm, comforting meal on a chilly day. The mix of vegetables, kale, and chicken sausage creates a satisfying combination of flavors and textures. The soup also makes for a great make-ahead meal or leftovers that can be reheated for a quick and easy lunch or dinner.

Instructions

1.In a large pot, heat olive oil over medium heat.
2.Add diced onion and sauté until translucent.
3.Add diced squash and garlic, and cook for 5 minutes.
4.Stir in chicken broth, dried sage, Italian seasoning, smoked paprika, kidney beans, diced tomatoes (with juice), and red pepper flakes.
5.Bring to a boil and then simmer for 10 minutes.
6.Add kale and elbow macaroni to the pot.
7.Cook for an additional 8-10 minutes until pasta and kale are tender.
8.Meanwhile, heat fully-cooked chicken sausage links in a separate pan until heated through.
9.Ladle soup into bowls and top with sliced sausage and sprinkle with Parmesan cheese.

PROS

This soup is packed with healthy nutrients from the kale and vegetables, and the addition of chicken sausage adds a good source of protein.
It’s a filling and satisfying meal on its own or can be paired with a salad or crusty bread.

CONS

The soup does take some time to prepare with chopping and simmering, but the end result is worth the effort.
If you prefer a vegetarian option, you can omit the sausage but may want to add additional seasoning for flavor.
