Ingredients

1 cup chicken broth
1/2 cup quinoa , rinsed and drained
2 quarts water
1 bunch lacinato ( dinosaur ) kale , sliced
1 teaspoon olive oil
1 large shallot , minced
1 teaspoon salt
This Kale and Quinoa with Creole Seasoning dish is a healthy and flavorful meal that is perfect for lunch or dinner. Instructions

1.In a medium saucepan, bring chicken broth to a boil.
2.Add rinsed and drained quinoa to the boiling broth.
3.Bring to a boil again, then reduce heat to low, cover and simmer for 15-20 minutes until quinoa is tender and all the liquid is absorbed.
4.In a pot, bring 2 quarts of water to a boil. Add sliced kale and cook for 5-7 minutes until tender yet still firm. Drain and set aside.
5.In a pan, heat 1 teaspoon of olive oil over medium heat. Add minced shallots and cook until translucent.
6.Add creole seasoning and cook for 30 seconds, stirring constantly.
7.Add kale to the pan and toss with the seasoned shallots. Cook for 2-3 minutes, then remove from heat.
8.Fluff the quinoa with a fork and serve topped with the seasoned kale.
