2 1/2 cups good quality white wine vinegar
2 -3 tablespoons olive oil
Kalamaria Toursi is a traditional Greek recipe that is commonly served as a meze (appetizer) or as part of a seafood spread. Instructions

1.Start by cleaning the squid and removing the head and tentacles. Cut each squid into rings.
2.In a large pot, bring 4 cups of water and 1 teaspoon salt to a boil. Add the squid and cook for 1-2 minutes until just tender. Drain and transfer the squid to a large glass jar. Add in the bay leaves, oregano, black peppercorns, coriander seeds, and red chili pepper.
3.In a separate pot, heat the white wine vinegar and olive oil until just boiling. Pour the hot liquid over the squid until fully covered.
4.Let the jar cool and then seal with a lid. Place in the fridge and let it marinate for at least 24 hours before serving.
