Ingredients

2 1/4 teaspoons yeast
1 cup lukewarm water
1 teaspoon sugar
1 teaspoon malt extract
5 cups flour , divided
1 cup milk
1 tablespoon salt
2 tablespoons cornmeal , for baking sheets
Kaisersemmeln, also known as Kaiser Rolls or Emperors' Rolls, are a type of bread roll that originated in Austria in the 18th century. They are typically round, slightly flattened, and have a distinctive pattern of 3 slashes on top. Kaisersemmeln are often served as breakfast rolls or with soup and salads. They can also be used as hamburger buns or sandwich rolls. In Austria, Kaisersemmeln are traditionally eaten on All Souls' Day with hot chestnuts. These bread rolls are easy to make at home and taste fresher and better than store-bought ones.

Instructions

1.Dissolve the yeast in a bowl with the lukewarm water and sugar. Stir it well and let it rest for 5 minutes.
2.Add the malt extract and 2 cups of flour to the yeast mixture. Mix them well until they form a homogeneous dough. Cover the bowl with a clean kitchen towel and let the dough rest for 1 hour.
3.In a separate bowl, mix the remaining flour, milk, and salt until they form a smooth dough. Combine them with the yeast dough.
4.Knead the resulting dough on a floured surface for 5 minutes until it is smooth and elastic. Cover the dough with a kitchen towel and let it rest for another hour.
5.Preheat your oven to 400°F (200°C) and sprinkle your baking sheet with cornmeal.
6.Divide the dough into 12 equal parts and roll them into round balls. Flatten them a bit and place them on the prepared baking sheet. Leave enough space between the rolls to allow them to rise.
7.Cover the baking sheet with a clean kitchen towel and let the rolls rest for 10-15 minutes.
8.Use a sharp knife to make 3 slashes on top of each roll. Bake them in your preheated oven for 20-25 minutes until they turn golden brown. Let them cool down on a wire rack.
