Ingredients

3 cups long grain rice
4 tablespoons ghee ( I use butter )
2 medium onions , sliced
6 whole cloves
20 whole peppercorns
12 cardamom pods , bruised
1 1/2 teaspoons ground turmeric
3 1/2 teaspoons salt
12 curry leaves
1 stalk fresh lemongrass or 2 strips fresh lemon rind
1 1/4 liters coconut milk
Kaha Bath, also known as Yellow Rice, is a staple dish in Sri Lanka and can often be found served in households or restaurants for special occasions and festivals. Instructions

1.Rinse the rice in cold water until the water runs clear.
2.Heat the ghee (or butter) in a large pot and add the sliced onions.
3.Stir in the cloves, peppercorns, and cardamom pods, cooking for 1-2 minutes.
4.Add the turmeric, salt, curry leaves, and lemongrass (or lemon rind), stirring everything together.
5.Add the rice to the pot and stir together until the grains are well coated with the spices.
6.Pour in the coconut milk and bring everything to a boil over medium-high heat, stirring occasionally.
7.Reduce the heat to low and cover the pot with a lid, simmering the rice for 20-25 minutes or until the liquid is absorbed and the rice is tender.
8.Once cooked, fluff the rice with a fork and remove the lemongrass (or lemon rind) before serving.
