Ingredients

2 cups boiled vegetables ( carrot , green peas , bottle gourd , potato , cauliflower )
3/4 teaspoon ginger paste ( squeeze out any excess moisture )
1/2 teaspoon black pepper
2 tablespoons flour
8 -10 tablespoons vegetable oil
salt , to taste
4 tablespoons vegetable oil
1 cup boiled onion ( mashed or chopped into a paste )
1 cup finely chopped tomatoes , seeds removed
3 -4 bay leaves
1 teaspoon ginger paste ( squeeze out any excess moisture )

1/2 teaspoon green chili paste
1 teaspoon ground coriander
1 teaspoon red chili powder
3/4 teaspoon turmeric powder
1 teaspoon garam masala powder
4 tablespoons heavy cream
salt , to taste
coriander leaves , to garnish

Instructions

1.In a large bowl, mash boiled vegetables well.
2.Add ginger paste, black pepper, flour and salt in the mashed vegetables and mix well.
3.Make small balls with the mixture and flatten them to form koftas.
4.Heat 8-10 tablespoons of vegetable oil in a pan and fry the koftas on medium flame until they turn golden brown.
5.In a separate pan, heat 4 tablespoons of vegetable oil and add mashed boiled onion. Cook until translucent.
6.Add finely chopped tomatoes and cook until the mixture is mushy.
7.Add bay leaves and ginger paste, garlic paste, green chili paste, coriander, chili powder, turmeric powder and garam masala powder. Cook for 2-3 minutes.
8.Add heavy cream and cook until the oil starts to separate.
9.Add salt to taste and cook for few more minutes.
10.Add the fried koftas to the curry and give it a gentle mix.
11.Garnish with coriander leaves and serve hot with rice or Indian bread.
