Ingredients

1 cup dried red lentils
4 cups water
1 medium onion , chopped
1 tablespoon corn oil
1 tablespoon tomato paste , and 2 teaspoons chow seasoning paste
1/2 teaspoon salt
Kae Misr Wot, or Ethiopian spiced lentil stew, is a popular vegan and vegetarian dish in Ethiopia. Instructions

1.Rinse red lentils in cold water and drain.
2.In a medium saucepan, combine the lentils with water, and bring it to a boil over medium-high heat.
3.Reduce the heat to low, cover and let the lentils simmer for 15-20 minutes until tender.
4.In another medium saucepan, sauté the chopped onions in corn oil over medium heat until they are translucent.
5.Stir in the tomato paste, chow seasoning paste, salt and 1/4-1/2 cup of water.
6.Add the cooked red lentils simmering in the pot and stir for 2-3 minutes until they are well combined.
7.Cover and cook for 6-8 minutes over low heat until it reaches your desired consistency.
8.Serve hot with injera bread and other side dishes of your choice.
