1 chopped onion

Instructions

1.Making Pakoras:
2.In a mixing bowl, add chickpea flour, finely chopped ginger, cumin powder, oregano or freshly ground ajwain, baking powder, salt and 1/2 cup of water and mix well to form a thick batter.
3.Add chopped onion, potato and cauliflower to the same batter and mix well.
4.Heat oil in a kadai or deep pan. Add spoonfuls of the mixture to the oil and deep fry until golden brown.
5.Remove the pakoras from the oil and keep aside.
6.Making Kadhi:
7.In a mixing bowl, whisk yogurt, chickpea flour, chili powder, mustard seeds, fenugreek seeds, turmeric and salt together until smooth.
8.Add 2 and 1/2 cups of water to the same bowl and whisk again.
9.Pour the mixture into a kadai or a deep pan and cook over medium heat for 15-20 minutes, stirring in between, until the mixture thickens and reaches desired consistency.
10.Add pakoras to the kadhi and cook for another 5-7 minutes.
11.Remove from heat and serve hot with rice or chapatis.
