Ingredients

1 butternut squash
2 teaspoons vegetable oil
1/4 teaspoon cumin seed
1/8 teaspoon fenugreek seeds

1/3 cup water
1 tablespoon lemon juice
2 tablespoons sugar

Instructions

1.Peel and cut the butternut squash into small pieces.
2.Heat the vegetable oil in a pan over medium heat.
3.Add the cumin seed and fenugreek seeds and cook for 30 seconds until fragrant.
4.Add the diced squash, turmeric, salt, coriander powder, and cayenne pepper if using. Mix well.
5.Add water, cover the pan, and let the squash cook for 10-15 minutes until tender.
6.Uncover the pan and add the lemon juice and sugar. Mix well and cook for another 2-3 minutes to let the flavors meld together.
7.Serve hot with rice or bread.
