Ingredients

1 lb lean ground beef , seasoned your way ( I use Mexican seasoning ) or 1 lb chicken breast , cooked and shred them in the blender ( I use Mexican seasoning )
1 can green chilies , diced
1 can cream of chicken and mushroom soup
1 can tomatoes , diced ( I use a Mexican blend )
1 onion , chopped
1/2 teaspoon minced garlic
1 jalapeno , sliced ( optional )
2 lbs Velveeta cheese , small chucks ( I use Mexican blend ) ( optional )
1/4 cup milk , less if you want a thicker cheese sauce ( use this only if you are using Velveeta )
1 package flour tortillas
1 teaspoon olive oil
Pam cooking spray
salsa ( I use Pace thick and chunky )
lettuce , shredded
tomatoes , chopped
low-fat sour cream
guacamole
cheddar cheese , shredded ( if you are not using Velveeta )
serve with chips

Kaccy's Chimichangas are a delicious and filling Mexican-inspired dish that's perfect for a quick and easy dinner. The dish is usually made with flour tortillas, ground beef or chicken, and plenty of cheesy goodness. Top it off with some sour cream, guacamole, and salsa, and you've got a meal that the whole family will love. Although not the healthiest option, it's a great way to indulge in some comfort food every once in a while.

Instructions

1.Preheat the oven to 400°F.
2.In a large skillet, heat the olive oil over medium-high heat. Add the onions, jalapenos, and garlic. Cook for about 1-2 minutes or until the onions are translucent.
3.Add the ground beef or shredded chicken to the skillet and cook for another 5-7 minutes or until the meat is no longer pink.
4.Add the green chilies, diced tomatoes, and cream of chicken and mushroom soup to the skillet. Mix well.
5.In another small saucepan, warm the Velveeta cheese and milk over low heat until the cheese is melted and smooth. Stirring occasionally.
6.On to an open flour tortilla, place about 2 tablespoons of meat filling down the center. Tuck in the sides of the tortilla and roll up tightly.
7.Spray the rolled-up Chimichangas with Pam cooking spray and carefully place them seam-side down on a baking sheet.
8.Once you've rolled up all the Chimichangas, put the baking sheet in the oven and bake for 10-15 minutes or until the tortillas are golden brown and crispy.
9.Serve the Chimichangas hot with a dollop of sour cream, guacamole, shredded cheddar cheese, chopped tomatoes, chopped lettuce, chips, and salsa.
