4 lbs chicken , cut up
2 large onions , sliced
2 tablespoons salt
3 pints hot water
1/2 lb long grain rice
2 medium onions , thinly sliced
1 tablespoon butter
1 tablespoon ground cardamom
1 tablespoon ground cumin
3 carrots , cooked and sliced
1/2 cup raisins

Instructions

1.In a large pot, cook chicken with sliced onions and salt in hot water for 30-40 minutes until tender.
2.Remove chicken from the pot and set aside. Reserve the chicken stock for later use.
3.Wash the rice and place it in a large pot along with the chicken stock.
4.Cook the rice on medium heat uncovered until most of the stock is absorbed by the rice.
5.In a separate pan, fry the thinly sliced onions in butter until golden brown. Set aside half of the fried onions.
6.Add the ground cardamom and cumin to the remaining fried onions in the pan. Mix well and stir for a minute or until fragrant.
7.Add cooked carrots and raisins to the pan. Stir well.
8.Mix half of the carrot and onion mixture with the cooked rice. Arrange the chicken on top of the rice.
9.Top the chicken with the remaining carrot and onion mixture. Cover the pot and cook on low heat for 15-20 minutes until the rice is fully cooked.
10.Garnish with the remaining fried onions.
