Ingredients

3 -4 lbs chuck roast ( Eye of Round , I like both )
3 tablespoons italian seasoning
2 tablespoons black peppercorns
1 tablespoon paprika
1/2 teaspoon crushed red pepper ( optional )
2 bay leaves
3 cups onions , chopped
1 cup of whole garlic ( slightly crushed )
1/4 cup Worcestershire sauce
3 cups beef bouillon , and water mixture
1 cup pickled pepper ( pepperoncinis with stem )
3 tablespoons bacon fat or 3 tablespoons oil
salt & pepper
K-Jon's Italian Beef is a slow-cooked dish that originated in Chicago, Illinois. It is often served as a hearty sandwich or over a bed of rice or pasta. Instructions

1.Preheat your oven to 300°F.
2.Combine the italian seasoning, black peppercorns, paprika, crushed red pepper, and bay leaves in a small bowl. Season the chuck roast generously with the spice blend.
3.In a large Dutch oven or oven-safe pot, heat the bacon fat or oil over medium-high heat. Sear the chuck roast on all sides until browned, about 3-4 minutes per side.
4.Remove the chuck roast from the pot and set it aside. Add the onions and garlic to the pot and cook until the onions are soft and translucent, about 5 minutes.
5.Deglaze the pot with the Worcestershire sauce and beef bouillon mixture, scraping the brown bits off the bottom of the pot. Add the pickled peppers and return the chuck roast to the pot.
6.Cover the pot with a tight-fitting lid and cook in the preheated oven for 3-4 hours, or until the chuck roast is fork-tender and falls apart easily.
7.Remove the chuck roast from the pot and shred it using two forks. Strain the cooking liquid through a fine-mesh sieve and reserve the onions and peppers.
8.Return the shredded beef, onions, and peppers to the cooking liquid and stir to combine. Serve hot with crusty bread or over a bed of rice or pasta.
