2 gallons milk

3 tablespoons cornstarch

Instructions

1.Heat milk in a large pot over medium-high heat, stirring occasionally until it reaches a temperature of 85°C.
2.Remove from heat and let it cool to 32°C.
3.In a cup, mix rennet and water.
4.Add the sugar, cornstarch, salt, and rennet to the milk and stir well.
5.Cover the pot and let the mixture sit for 30 minutes.
6.Cut the curd into small pieces and mix gently.
7.Place the pot back on the heat and bring the mixture to a temperature of 38°C.
8.Remove from heat and let it sit for 10 minutes.
9.Drain the mixture through a cheesecloth-lined strainer.
10.Place the curds into a pot of boiling salt water and cook for 15 to 20 minutes or until they float.
11.Remove the curds with a slotted spoon and let them cool.
