Ingredients

1 1/4 lbs home grown tomatoes
1/2 cup onion , finely chopped
1 tablespoon jalapenos or 1 tablespoon green chili , minced , to taste
3 tablespoons red wine vinegar
3 cloves garlic , finely minced
1 teaspoon oregano
2 tablespoons cilantro , chopped
2 tablespoons lime juice
1 pinch sugar
salt
Pico de Gallo is a traditional Mexican condiment also known as salsa fresca, which means 'fresh salsa'. June's Pico de Gallo is a homemade version that includes diced tomatoes, onions, garlic, jalapenos or green chilies, cilantro, and lime juice. This zesty salsa is perfect for dipping tortilla chips or as a topping for tacos, burritos, or grilled meats. It's also a healthy snack option that's easy to prepare and bursting with flavor.

Instructions

1.Wash the tomatoes and remove the stem. Cut the tomatoes into small pieces and place them in a bowl. Add a teaspoon of salt to the tomatoes and mix well. Allow the tomatoes to sit for 10-15 minutes.
2.After the tomatoes have rested, drain any excess water and transfer the tomatoes to a large mixing bowl.
3.Add finely chopped onion, minced garlic, minced jalapenos or green chilies, and chopped cilantro to the bowl.
4.In a separate bowl, whisk together red wine vinegar, lime juice, oregano, sugar, and a pinch of salt.
5.Pour the vinegar mixture over the tomato mixture and toss gently until well combined.
6.Taste and adjust the seasoning as necessary. Serve immediately or refrigerate until ready to serve.
