250 g butter
200 g caster sugar
1 tablespoon grated orange zest
4 eggs
1 2/3 cups self raising flour

Instructions

1.Preheat the oven to 180°C (160°C fan-forced). Line and grease a round cake tin.
2.Beat the butter, sugar and orange zest in a large bowl until light and creamy.
3.Add the eggs one at a time, beating well after each addition.
4.Stir in the sifted flour and ginger powder until just combined.
5.Spoon the mixture into the prepared tin and smooth the surface with a spatula.
6.Bake for 40-45 minutes or until a skewer inserted into the centre of the cake comes out clean.
7.In the meantime, prepare syrup by combining sugar and orange juice in a small saucepan. Stir over low heat until sugar dissolves.
8.Pour syrup over cake while it's still warm.
9.Cool cake in the tin before moving it to a wire rack to cool completely.
