Ingredients

2 cups warm water
1 teaspoon sugar
2 packages active dry yeast
6 cups all-purpose flour ( I use 2 cups whole wheat and 4 cups all-purpose )
1 1/2 teaspoons salt
1/3 cup olive oil
cooking spray

Instructions

1.In a bowl, mix the warm water with the sugar and yeast. Let it sit for up to 10 minutes to allow the yeast to activate.
2.In another bowl, mix the flour and salt together.
3.Add the olive oil to the activated yeast mixture.
4.Slowly add the flour mixture to the yeast mixture while stirring with a wooden spoon until it forms a sticky dough.
5.Coat the dough with a thin layer of olive oil and set it aside to rest for 10 minutes. Repeat the oil coat twice more while the dough rises for the next hour.
6.Preheat your oven to 500°F.
7.Divide the dough into 16 even balls and place them on a baking sheet lined with parchment paper.
8.Press each ball down to 1/2 inch thickness with your hands and spray cooking oil on each one.
9.Place the baking sheet in the oven and bake for 7-12 minutes or until golden brown.
