15 dried arbol chiles
1 tablespoon/ 15 ml red wine vinegar
1 garlic clove , minced
salt & freshly ground black pepper

12 Italian tomatoes , blanched and peeled

1 pound/ 450 g pork tenderloin
1 tablespoon/ 15 ml smoked paprika
1 tablespoon/ 15 ml sweet paprika
1 teaspoon/ 5 ml cayenne
2 tablespoons/ 30 ml canola oil
salt & freshly ground black pepper
1 red onion , thinly sliced
4 crusty rolls or 1 baguette , cut into 4 pieces
squeeze lime juice

Instructions

1.Preheat the oven to 350°F.
2.In a saucepan, combine the arbol chiles, red wine vinegar, minced garlic, salt, and black pepper. Add enough water to cover the chiles and bring to a boil. Reduce the heat and simmer for 10 minutes.
3.Remove the chiles from the saucepan and remove the stems and seeds. Add the chiles to a blender along with the red wine vinegar, sugar, blanched and peeled tomatoes, garlic clove, salt, and black pepper. Blend until smooth.
4.Season the pork tenderloin with smoked paprika, sweet paprika, cayenne, salt, and black pepper. Heat the canola oil in a large skillet over high heat. Add the pork tenderloin and brown on all sides. Remove the pork from the skillet and add the sliced red onion. Cook until softened and slightly browned.
5.Pour the tomato sauce into the skillet with the red onions and cook for 5 minutes. Slice the pork tenderloin into 1-inch thick rounds.
6.Cut the rolls or baguette in half and spread a tablespoon of the tomato sauce on each half. Add a slice of pork tenderloin and a spoonful of the red onions. Top with more tomato sauce and a squeeze of lime juice.
7.Wrap the sandwiches in foil and bake for 10-15 minutes.
