6 poblano chiles
5 eggs , separated
1 lb mexican cheese
1 cup flour

5 fresh tomatoes

Instructions

1.Roast the poblano peppers over an open flame or in the oven until skin is charred.

4.Stuff each pepper with Mexican cheese.
5.In a separate bowl, beat the egg whites until stiff peaks form.
6.Add egg yolks to the egg whites and mix.
7.Dredge each pepper in flour and shake off excess.
8.Gently dip each pepper in egg mixture and place in hot oil until golden brown.
9.Remove from oil and drain on paper towels.
10.To make the tomato sauce, add chopped tomatoes, onions, garlic, cumin seed, and salt to a pot and cook over medium heat until the tomatoes are soft. Then, puree the mixture until smooth.
11.Serve the stuffed peppers with the tomato sauce.
