Instructions

1.In a large pot, heat 1 cup of the vegetable broth over medium heat.
2.Add the onion and garlic and cook until tender, about 5 minutes.
3.Stir in the coriander, cinnamon, turmeric, garam masala, and cayenne pepper, cooking for 1 minute.
4.Add the remaining vegetable broth, lentils, and diced tomatoes (with their juices) and bring to a boil.
5.Reduce heat and let the soup simmer, uncovered, until the lentils are tender, about 20-25 minutes.
6.If desired, stir in the lemon juice and serve, topped with crumbled feta cheese.
