Ingredients

1 cup calrose rice ( or a premium Japanese-style rice such as Nishiki )
2 tablespoons vegetable oil
10 cups chicken broth or 10 cups turkey broth
2 teaspoons salt
1 tablespoon finely minced cilantro ( stems )
1 cup plain soymilk ( optional )
chopped fresh cilantro leaves
minced green onion
oyster sauce
soy sauce
hot pepper sauce , such as sriracha ( or Tabasco )

Instructions

1.Rinse rice several times until water is clear. Then, drain.
2.Heat medium-sized pot over medium heat. Add vegetable oil.
3.When oil is hot, add the rice to the pot. Stir constantly for three minutes to coat the rice with oil.
4.Add chicken or turkey broth to the rice in the pot. Bring to a boil then reduce heat to low.
5.Cover the pot with a lid and let simmer for two hours. Stir occasionally to prevent the rice from sticking to the pot.
6.Add salt and minced cilantro stems to the pot. Simmer for another 10 minutes.
7.Stir in the plain soymilk. Simmer five minutes, stirring occasionally.
8.Remove from heat and let it cool slightly before serving.
