Ingredients

2 lbs ducklings
salt and pepper
1 orange , juice of ( reserve 1/4 of the rind )
2/3 cup carrot , peeled and sliced
1/2 cup onion , peeled and sliced
3/4 cup currant jelly
1 teaspoon caraway seed , more to taste
2 slices bread , toasted ( use a good quality bread )

Instructions

1.Season the duckling with salt and pepper.
2.In a roasting pan, combine with the orange juice, carrots, onions, caraway seeds and jelly.
3.Roast at 375°F for approximately 1 night to 1 hour and 15 minutes until internal temperature reaches 180°F.
4.Baste frequently with pan juice.
5.Remove the duckling to a carving board.
6.Crush the bread into the mixture. Combine with the toast.
7.Place the roasting pan on the stove and bring this mixture to a boil stirring constantly. Cook over high heat for approximately 10 minutes or until the mixture thickens
8.Slice the duckling and pour the sauce over the top. Serve immediately.
