Jollyrogers' Chilaquiles are a classic Mexican breakfast dish consisting of crispy fried tortillas coated in a spicy tomato sauce and topped with cheese and other toppings. It is believed to have originated as a way to use up leftover tortillas and has been a favorite breakfast dish in Mexico and the southwestern United States for generations. While there are countless variations on the recipe, the addition of spicy chorizo or pork sausage and tangy black olives in this version make it a particularly flavorful and satisfying meal. Serve it with a side of fresh fruit or a mimosa for a decadent brunch treat.

Instructions

.Preheat your oven to 375 degrees F (190 degrees C).
.In a bowl, toss the chopped onion and sliced black olives with 1/4 cup of the white vinegar and set aside.
.Heat 1 tablespoon of vegetable oil in a large skillet or frying pan over medium-high heat.
.Add in the chorizo or spicy pork sausage (if desired) and cook until browned, breaking up the meat into small pieces.
.Add the cut corn tortillas and 1/4 cup of vegetable oil to the pan and cook until crispy and golden brown.
.In a separate saucepan over medium heat, make the tomato sauce by whisking together the all-purpose flour, three cans of tomato sauce, 1 cup of water, unsweetened cocoa powder, white sugar, 1 tablespoon of white vinegar, dried oregano, and taco seasoning mix (if desired) until smooth.
.Bring the tomato sauce to a simmer, stirring frequently, for 10-15 minutes. Add in the drained diced green chiles and stir to combine.
.In a large, oven-safe casserole dish, layer the crispy tortillas, browned chorizo or sausage, and coated onions and olives.
.Pour the tomato sauce over the top of the layers and sprinkle with crumbled cotija or feta cheese.
.Bake the casserole in the preheated oven for 20-25 minutes, or until heated through and the cheese is melted and bubbly.
