Ingredients

1 roasting chickens , cut into serving pieces
1 lb boneless lean beef , preferably chuck , cut into 1/2 inch cubes
2 teaspoons salt
pepper
6 tablespoons oil
1 cup finely chopped onion
3 medium ripe tomatoes , peeled , seeded and finely chopped ( can sub 1 cup chopped canned tomatoes )
1/4 cup tomato paste
1 1/2 tablespoons chopped garlic
1 hot chili pepper , seeded and finely chopped
1/2 teaspoon ground ginger
1 bay leaf
2 cups chicken broth or 2 cups beef broth
2 cups water
1/2 lb smoked ham , diced
1 1/2 cups uncooked white rice

Instructions

1.Season chicken and beef with salt and pepper and set aside.

4.Add chicken and beef to the pot and cook until browned on all sides for about 5 minutes.

6.Stir in uncooked rice and reduce the heat to medium-low.
7.Cover the pot and continue to cook for 25-30 minutes or until the rice is tender and the liquid is absorbed.
8.Remove the bay leaf before serving. Enjoy!
