1/2 cup fresh cilantro , chopped
1 lime , juice of
8 flour tortillas , warmed
1 cup chicken breast , cooked and shredded ( optional )

Instructions

1.In a small bowl, whisk together the apricot preserves, sour cream, mayonnaise, hot sauce, and cumin.

4.Add the corn and black beans to the skillet and stir to combine. Cook for 2-3 more minutes or until heated through.
