Instructions

1.Preheat oven to 375 degrees F.
2.In a large mixing bowl, mix together the uncooked brown rice, canned corn, Italian seasoning, canned diced tomatoes, water, salt, and pepper.
3.Add the diced bell pepper and sliced green onions to the rice mixture.
4.In another large mixing bowl, combine the raw crumbled ground beef, Italian seasoning, garlic powder, diced green onion, diced bell pepper, canned diced tomatoes, water, salt, and pepper.
5.Spread the ground beef mixture in the bottom of a glass baking dish.
6.Spoon the rice mixture on top of the ground beef and spread into an even layer.
7.Lay the bacon slices on top of the rice mixture, covering the entire dish.
8.Bake uncovered for 45 minutes, or until the bacon is crispy and the rice is tender.
9.Remove from the oven and sprinkle the shredded Monterey Jack cheese and thinly sliced green onions over the top of the casserole. Return to the oven for an additional 10 minutes, or until the cheese is melted and bubbly. Serve hot.
