16 ounces tomatoes , diced in juice
1/2 teaspoon thyme
3/4 teaspoon salt ( divided )
1/4 teaspoon ground black pepper
2 1/4 cups water ( divided )
2 tablespoons butter
1/2 cup milk , 2 %
1/2 tablespoon garlic , minced
1 cup instant mashed potatoes

Instructions

1.Preheat oven to 375°F (190°C).
2.In a large oven-proof skillet, heat oil over medium-high heat. Add sliced onions, celery, and carrots, and cook until vegetables are softened and onions are translucent.
3.Sprinkle flour over the vegetable mixture and stir until well combined.
4.Add diced tomatoes, thyme, 1/2 teaspoon salt, pepper, and 2 cups of water to the skillet, stirring well to combine.
5.Add the leftover roast beef to the skillet, spooning the tomato mixture over the top of the beef to coat it evenly.
