Ingredients

1 pound boneless , skinless chicken breast halves , cut into bite-size pieces
salt and ground black pepper to taste
3/4 cup white sugar
1 teaspoon ground cayenne pepper
3 tablespoons white wine vinegar
6 tablespoons fish sauce
1 tablespoon creamy peanut butter
1 tablespoon olive oil
5 cloves garlic , minced
4 large eggs , lightly beaten
1 package pad Thai rice noodles
1/2 cup fresh bean sprouts
2 cups beef broth
1/2 cup chopped green onion
Pad Thai is a popular street food originating from Thailand and has now become a favorite all over the world. Joe's Fusion Chicken Pad Thai is a twist on this traditional dish, mixing together the classic Thai flavors of fish sauce and peanut butter with some Western spices like cayenne pepper. The resulting dish is a perfect balance between sweet and salty, spicy and satisfying. The chicken is sautéed perfectly, and the noodles have the right texture. Instructions

1.Season chicken with salt and pepper and set aside.
2.In a small bowl, whisk together white sugar, cayenne pepper, white wine vinegar, fish sauce, and peanut butter, then set aside.
3.Heat olive oil in a wok or large non-stick skillet over medium heat. Add minced garlic and stir for about 30 seconds until fragrant.
4.Add chicken to the wok and cook until golden and cooked through, for about 5-7 minutes.
5.Move the chicken to one side of the wok and pour eggs onto the other side. Scramble the eggs until they are set, for about 2-3 minutes.
6.Add the package of pad Thai rice noodles to the wok, as well as the prepared sauce. Toss everything together and stir fry for another 1-2 minutes until heated through.
7.Pour beef broth over the mixture and stir until well-combined. Add fresh bean sprouts and chopped green onions. Stir fry for an additional 1-2 minutes until everything is heated through, then serve hot.
