Ingredients

3 lbs chicken , chopped
4 cups water
2 teaspoons salt
1/4 cup sesame seeds
1/4 cup pumpkin seeds
1 bunch cilantro , chopped
1 bunch scallion , chopped
1 cup tomatillo , hulled and chopped
2 chilies , chopped
2 corn tortillas , chopped , soaked in water and drained
Jocon is a traditional Guatemalan chicken dish that originated in the department of Huehuetenango. The dish is typically made with chicken, sesame and pumpkin seeds, tomatillos, cilantro, and scallions. The seeds are toasted and blended with the vegetables to make a thick and flavorful sauce that is added to the chicken. Jocon is a versatile dish that can be served with rice or corn tortillas.

Instructions

1.In a large pot, boil the chicken in water with 1 tsp of salt for 25-30 minutes until cooked through.
2.In a skillet, toast the sesame and pumpkin seeds until lightly browned.
3.In a blender, puree the cilantro, scallion, tomatillo, chilies, and remaining 1 tsp of salt.
4.Add the pureed mixture to the skillet with the toasted seeds and cook for 2-3 minutes over medium heat.
5.Add the chopped tortillas to the skillet and cook for another 2-3 minutes, stirring occasionally.
6.Add the mixture to the pot with the cooked chicken and let it simmer for 10-15 minutes until heated through.
