1/2 lb spinach noodles
3 eggs , separated
1 cup cottage cheese
4 tablespoons sour cream

Instructions

1.Preheat your oven to 350°F (180°C).
2.Boil the spinach noodles until they are al dente. Drain in a colander and transfer them to a mixing bowl. Let them cool for a few minutes.
3.In a separate bowl, beat the egg yolks until they are light and frothy. Add cottage cheese and sour cream and mix well.
4.Beat the egg whites in another bowl until they form stiff peaks. Fold them into the cottage cheese mixture and mix.
5.Add the pepper and mix everything together gently.
6.Lightly grease a 6-cup ring mold or a 2-quart casserole dish and pour the mixture into it.
7.Bake in the oven for 45-50 minutes until the top is golden brown and the center is firm.
8.Once done, take out the ring mold and let it cool down.
9.Invert the noodle ring on a platter and serve.
