Enchilada Casserole is a popular dish in Mexican cuisine that is usually high in fat and calories due to the use of cheese, meat, and tortillas. This WW version of the recipe is a healthier alternative that still retains all of the flavors of the original dish. You can modify the recipe to suit your dietary needs by using high-fiber tortillas or omitting the refried beans. Substitute the cheese with a plant-based alternative or use a small amount to reduce fat content. This dish is perfect for those following a low-carb or low-fat diet and is easy to make ahead of time for busy weeknights.

Instructions

.Preheat your oven to 350°F.
.Coat the bottom of a 13x9 inch baking dish with cooking spray.
.In a large skillet over medium heat, cook the ground turkey and onion for about 10 minutes or until the turkey is no longer pink. Drain any fat if necessary.
.Pour half of the enchilada sauce over the cooked turkey and stir to combine.
.Arrange 6 tortillas on the bottom of the baking dish, cutting them to size if necessary. Layer on the refried beans and then the turkey mixture. Repeat layering with remaining tortillas, beans, and turkey mixture. Top with the remaining enchilada sauce.
.Cover the baking dish with foil and bake for 30-40 minutes or until heated through.
.Remove the foil and sprinkle the cheese over the top of the casserole. Bake for an additional 5-10 minutes or until the cheese is melted and bubbly.
.Serve hot and garnish with fresh cilantro if desired.
