Instructions

1.In a small bowl, whisk together the chicken stock, dry sherry, cornstarch, sugar, rice vinegar, kosher salt, and black pepper.
2.In another bowl, mix the sliced chicken with cornstarch, dry sherry, kosher salt, white pepper, and egg white.
3.Heat the peanut oil in a wok over high heat. Once the oil is hot, add the chicken to the wok. Cook the chicken until it is browned and crispy, about 4-5 minutes. Remove the chicken from the wok and drain on paper towels.
4.In the same wok, add the mushrooms, scallions, dried arbol chiles, garlic, and ginger. Stir-fry the mixture until the mushrooms are soft, about 3-4 minutes.
5.Add the chicken back into the wok and mix the ingredients well. Drizzle with sesame oil and stir the chicken and mushroom mixture well.
6.Serve the Jiyou Jun Chao Ji with cooked rice.
