2 corn tortillas
4 tablespoons fat-free refried beans , divided
2 eggs
1 tablespoon green chili , chopped
1/4 cup light cheddar cheese , shredded
2 tablespoons salsa
1 tablespoon fat free sour cream
Jim and Mika's Grilled Colorado Breakfast is an easy and delicious breakfast dish that can be made in minutes. This breakfast bowl with a Mexican twist is inspired by the traditional breakfast dish from Colorado. Grilled corn tortillas and a fried egg are topped with melted cheese, diced chili peppers, and salsa. From the fat-free refried beans to the light cheddar cheese, this dish is packed with protein and flavor. Plus, it's a perfect breakfast dish that can be enjoyed any day of the week.

Instructions

1.Pre-heat grill to medium heat.
2.Warm the tortillas on the grill for 30 secs per side, then place them on plates and set aside.
3.Heat a small frying pan over medium heat and add half of the refried beans to the pan.
4.In the same pan, cook the eggs to your liking; over easy, sunny-side up, scrambled, etc.
5.Place a fried egg on top of each tortilla.
6.Sprinkle half of the shredded cheese on top of each egg.
7.Add a tablespoon of the diced chili peppers on top of the cheese.
8.Drizzle a tablespoon of salsa over each pancake.
9.Top each with a dollop of fat-free sour cream and serve immediately.
